We cold-press Il Lime Oil from fresh whole California limes and Central Coast olives. We had crudo in mind when we created Il Lime Oil, but it's also a delicious condiment for avocado toast, corn on the cob, grilled shrimp and nutty Thai curry!

Il Lime Oil is what the olio industry likes to call a "co-mill", where we actually mill fresh, whole limes and just-harvested olives together, to create a pure lime-olive oil that both concentrates flavor and reveals the complexity of each fruit.
