Cí Cí Chili tomato Confit Toast

 
 

A drizzle of Cí Cí Chili Olio adds brightness and a touch of heat to sweet olio-poached tomatoes.

Ingredients

Cherry Tomatoes, 2 pints

Garlic, 4 cloves unpeeled and smashed

Fresh basil, 3 leaves

Fruity Olive oil, about 1/3 cup

Kosher salt, 3 pinches

Crusty bread, grilled or toasted

Flaky salt , to taaste

Cí Cí Chili olio, drizzled at the table

Steps

Heat oven to 350 degrees

In an oven safe pan, snugly arrange tomatoes, garlic, basil leaves, salt. Add enought Fruity Olio to submerge the tomatoes about 50%.

Bake for about 45 minutes, until tomatoes have collapsed into themselves and are swimming in a swirl of olio and tomato juices.

To serve, spoon tomatos and their oil over toasty bread. At the table, sprinkle tomato toast with flaky salt and a heavy drizzle of Cí Cí Chili Olio.
